The Quebec-bred Chantecler chicken is as white as snow and has small wattles and combs that are less prone to frostbite in the winter.

It all started at the Oka Abbey. Brother Wilfrid Châtelain was in charge of the poultry section at the Oka Agricultural Institute, where the chickens had names like Delaware, New Hampshire, Jersey Giant and Plymouth Rock. It was obvious that these chickens were not from Canada. Brother Wilfrid found it unthinkable that of all the chickens at the abbey, there was no Canadian breed.
